El Vasco’s grill hits

Our cooking is all about product and fire. On the menu you’ll find:

  • Basque txuleta (dry-aged) carved to your preferred doneness.
  • Josper-grilled octopus with panadera potatoes and Pimentón de la Vera.
  • Bacalao al pil-pil, emulsified the traditional way.
  • Braised beef cheek, silky and rich over truffled parmentier.

To start, go for a cazuelita of txistorra or seasonal zamburiñas. To drink, choose benchmark Rioja and Ribera del Duero, characterful Mallorcan reds (Mantonegro, Callet) or a chilled txakoli—ideal with seafood and grill.

Dessert (and the long sobremesa)

All through September, Sundays we’re open until 00:30 (12:30–00:00) with continuous kitchen. Come for a late lunch, a cool evening dinner—or that Sunday plan that happily runs long.

  • Couples plan: sunset route → txuleta for two → cheesecake and a glass of red.
