December always arrives with a different rhythm: more meetings, more celebrations, more impromptu meals and an atmosphere that invites you to sit down at the table and relax. At La Vasca, we like to accompany this time of year by adapting to what people most want. That’s why, throughout the month, from Tuesday to Thursday, we replace the weekly menu with a selection of suggestions for the week. This is a more flexible and varied formula that better suits the festive weeks ahead.
It’s a way of offering dishes that are really appealing in winter, without the rigidity of the usual menu and with the freedom to create new offerings every week. This way, every visit has an element of surprise and allows you to enjoy flavours that are more in tune with the season.
A proposal designed for this time of year
Instead of a set menu, each week we present four suggestions:
- a stew,
- a fish dish,
- a meat dish,
- and a dessert of the day.
These are warmer, comforting, seasonal dishes, perfect for cold December days. What’s more, this format allows us to work with fresh produce, experiment with recipes that don’t fit into a set menu. We also can offer variety to those who visit us several times during the month.
For example, this first week of the month we have dishes such as chickpeas stewed with clams in green sauce, roasted salmon with citrus fruits and yoghurt and dill sauce, Rib-eye steak with potatoes and Padrón peppers, and apple and cinnamon tart. These dishes embody the spirit of December: simple, tasty and designed to be enjoyed at leisure.
The idea is that each week brings new flavours and that there is always something different to discover.
January brings back the daily menu
Once the holidays are over and everything returns to normal, we will resume our daily menu from Tuesday to Thursday, as usual. During December, we prefer to offer this more flexible and seasonal alternative, which better suits the atmosphere and dynamics of the month.
